  2. Cold Beef Salad with Blue Cheese Dressing

  5.                 Cold Beef Salad

  7. 1 head red leaf lettuce
  8. 1/2 sweet onion (Vidalia or equivalent) or Red Onion
  9. 1 carrot
  10. 1 C cooked, cold shredded beef
  11. 6 mushrooms sliced thinly
  12. 1/4 C shredded cheese (cheddar or jack or parmesean)
  13. Freshly ground pepper

  16. Clean and tear the lettuce into bite size pieces.
  17. Slice the onion very thinly. Slice the carrot very thinly.
  18. Toss all the ingredients together.  Toss with the Blue Cheese
  19. dressing, grind pepper over the top and serve.

  23.                 Blue Cheese Dressing

  25. 2 C Mayonaise
  26. 1 C Buttermilk
  27. 1 dash worcestershire sauce
  28. 2 cloves of garlic crushed
  29. 2 oz crumbled blue cheese
  30.  
  31. Stir some of the buttermilk in with the cheese.  Mix until
  32. creamy but still lumpy.  Combine all ingredients and stir
  33. throuroughly.  Keep refridgerated, mix before using.
